Find a flat piece of lawn.
Throw a coupe of litres of water on it and let it soak in for a few sec's.
Place your placcy sheet on the lawn and cut it with a (decent) diamond blade in a 9" angle grinder.

I only ever use the very best diamond blades like Rolson and Amtech.

The thin stainless discs will be fine, its easy to break off the burnt bits afterwards and dress with a file.

Place it between 2 pieces of plywood marked up where the cut needs to be, screw together well and cut the whole lot of it with a fine toothed jigsaw blade, screw a straight edge to the wood.

Then you can file the edge down by pushing it just proud of the wooden end.

A faff but not likely to let the polycarb sheet break.

Scribe with hook Stanley blade & snap. I have done from 1mm to 5mm, when I was working as a model maker (no not toys).

I've used quite a few methods previously but have had best results from a cheap wet diamond tile saw.

Diamond disc works well (also does a good job in fibreglass).
If you want some intricate cuts you can use a heated wire jobbie. Make a long C shape out of lengths of 3 x 1, put a couple of screws in the ends, wrap some 0.6mm lockwire round the screws. Connect a 12v headlamp bulb in series with the lockwire to a car battery. Lamp lights, wire gets hot (but not red hot) and cuts through Wickes polycarbonate corrugated sheets beautifully.
