Would I be crazy planting a privet hedge now? Intending to get some 90cm specimens to plug a gap.

No, now is a great time. Ground is still warm and it will settle and root in ready to grow well in spring.
If its a large area you mey be better waiting and getting bare root plants which will be available from end of october-ish as that will be cheaper but if its just a few containerised plants your putting in go nuts.
