removing skirts - tiling to floor

My bathroom is all tiled but I have skirting boards fitted. I want to remove these and have floor to ceiling tiles, are there any special steps I need to consider?

For example:
Can I have laminate or vinyl flooring? If so how do I ensure it's water tight?

Have I got to have tiled floors (which I quite like)? If so do I use any special sealant for where the floor meets the wall etc?

Whether it is a tiled floor or laminated/vinyl, it would be a case of a water resistant sealant gunned in, where the floor meets wall.
 
Is there any particular reason (other than personal preference) why I should favour one approach (tile to floor or keep skirting boards)?

No, there are no really benefits to doing one or the other.
That is providing your wall tiles finish of neatly above the skirting and do not protrude over the profile.
