If you're going to remove part of the chimney breast anyways, you might as well remove it to the ceiling level of your room. Support required will be the same (or even less as there's now less weight) and you don't have an unsightly half chimney breast still there if you ever decide to remove...

Yeah, its less than 800mm from the floor. I think these uPVC windows were put in so long ago that the regs weren't in force back then. Just hope the new pane doesn't look out of place compared to the others! With a bay window that size - how much you think it might cost to replace it...
