Advice needed - removing or covering ceramic floor tiles

We have a kitchen floor which has ceramic tiles laid on it. These were laid 6 months ago and because of using an 8mm gap and white grout which filthied with 2 days. The grout was dug out and replaced with another. We tried sealing it which has messed the tiles up. It looks a mess.

There is an unevenness in the floor, not extreme. I would ideally like to lay laminate lock tiles on top but i believe you cant do this if its not completely flat. Anyway to level it?

Alternatively we had considered putting vinyl lay on top?

Finally the hardest option is to pull up the ceramic floor tiles but what would this do to the concrete floor?
