Can anyone shed some light on the best exterior varnish to use on an Oak front door?

One of the marine varnishes will do the job, BUT, you will need to put on AT LEAST 5 coats, and you should rub it down and recoat EVERY YEAR.
Don't believe anything that says two coats and/or dry in 30 mins., lasts for years or you will wish you'd never done it. The best thing to do is oil it then something like linseed wax if you want to put anything on it. The maintenance is far easier and you won't get the stuff peeling off.
