Rake out ( clean out mortar) to a depth of about 15mm and clean out dust etc. Us a mix of 1 cement 1 line 5 building sand, not to wet, fill joints using pointing trowel allow muck to go of a bit the joint finish either with a jointing iron, (concave impression) or recessed (morter sits back 3/5 mm into the brick, flush (flush with brick) or weather struck, top of bed sits about 2mm under brick above and then slopes to outside edge of top of brick below(gives an impression of a slope,to allow water to run off.
Hope this helps

Get your mix on a trowel or a hawk and scrape the mortar off it with the jointing iron straight into the joint.
