Cavity tray disaster

With all the wind and rain we've been having, our garage has developed a shower through the flat roof. Or rather, through the cavity. I've known the cavity tray was full of snots and figured that was the problem.

Finally had a break in the weather to get a brick out above the felt up stand to clean the tray out and.... didn't find a tray.

Dug down through the snots and finally found it. Seems the cavity tray nicely diverts any water into the BACK of the up-stand, which then runs down and through the ceiling.

Will try and get some pics tomorrow, but essentially asking what's involved to put a new cavity tray in a wall that's already built. Imagining 3-4 bricks out at a time, fit a tray segment, re-brick (with proper weep holes) and repeat down the length of the wall.

Any thoughts?

Thats the way you do it there will be different types, and the last ones I used had strips on that pealed of to seal them together.
