I want to add a washing machine tap in 15mm plastic pipe. Is it advisable to use some sort of sealant in the compression joint? A plumber I recently used seems to have used something around the joints.

No, do not use any jointing compound.
Use a copper olive instead of brass and if needed you can use PTFE tape.
Also make sure you use pipe inserts in the plastic pipe.

Thank you. Would that be a copper or brass olive which comes with the tap?

You will have to check, but most come with Brass olives, copper ones are sold in Plumbers merchants.
The copper ones are "softer" and tend to work better on plastic pipe, but some people just fit whatever comes with the fitting without problems.
Don't forget the pipe inserts and don't over tighten.
