I need to tile over the shower pipes. Do they need to be protected from the mortar? I'm thinking of using cable channelling as protection. If I put the channelling behind and on top of the pipe, would this be ok? Or can anyone suggest any other options?

protected yes.

denso tape if you can be bothered to find some, or i have used thick polythene from clean rubble sacks taped with insulating tape - anything to seperate the mortar from the copper, channeling would do if you caulked/siliconed it.

Just over the top will be fine; they won't be in contact with render/plaster/adhesive & will be able to move due to expansion/contraction.
