Cutting back apple and plum trees

I am cutting back a fairly large garden with conifers, bushes and a few trees.
A couple of the trees are apple trees and plum trees but im not exactly sure how I should be cutting them back, can anyone help me out, kind regards Paul...

really depends on what shape youre trying to achieve.

Cut apple trees back in January when they are dormant.

Cut plum trees back in June as they are prone to silverleaf disease, pruning in summer reduces the risks.

Thanks very much, I will do exactly that. The least problems the better as far as I am concerned
 
Should be fine to cut apple trees now as their growing season is now over.
The leaves should now be 'on the turn' and nearly ready to drop. You can cut them back fairly hard, cut back to a growth point (shoot) or a bud.
