Cutting tap hole in composite sink

I have just been ordered to install a composite sink by her indoors :D It will go in a nice new worktop which is not the issue.
It is left or right hand with slight cut outs on the underside for the taps to fit.
How is the best way to remove the cut out??? Do I drill it with a hole cutter? or smack it with a drift and mallet???
Any ideas before I make a mess of it :(

Hole cutter :)

Use a mallet only if you want the missus to use it on you when you've cracked the sink :LOL:
