How to keep natural look to pine

What is best for clear pine doors and knotty pine architraves/ skirting to protect them but keep them as natural looking as possible?

as long as you realise what ever you choose they will be an antique pine colour after a 2 or so years
 
Yeah I actually bought some Danish oil for the job but then read and heard from people that it goes yellow/ orange over time. It could be the best option though...??

Pine itself yellows - it's mainly the effect of exposure to UV light together with some oxidation. I doubt that Danish oil would work because oil finishes tend to be slightly permeable (and give little protection from UV). You need something like a clear acrylic finish with a UV-blocker - even then you'll still get some yellowing
