Tongue and groove wall covering

Hello,
I want to fit tongue and groove boards in my kitchen between the cupboards and worktops and in a few other places.
The question is- How do I join the t&b boards to the worktop so there is a gap for expansion but so moisture and food crumbs cant gather there?
If i treat the wood properly, is there any reason it cant be used around the sink?

if its tounge and groove natural pine you dont realy need an expansion gap 1mm will be fine as pine dosnt expand to any noticeable amount along the grain

you can put pine behind a sink with proper treatment applied it will require more atention than other areas
usualy a splashbach looks much better

a discreet bit of quadrant could fill the gap nicely
