I am about to build ceiling to floor cupboards in my bedroom. I intend using MDF doors at 2m height. Is this a viable option? If not, what would you recommend?

Leave clearance top and bottom to allow for uneven floors and ceilings and make sure you use enough hinges.

Yes fine, or you can cheat and buy ikea doors ready made.
If you can get ready made doors in the size and style you want that will normally be cheaper and easier.
