We have a room that has two internal doors that have been boarded up and plastered over. We are getting these walls reskimmed and it occurred to us that it may be worth filling this cavity with some form of insulation before we replaster. Is this worth doing and if so is there a product that can be introduced through a hole at the top of the cavity?

Do you know the cavity does not have insulation already?
You could introduce loose lay insulation to the top but if there is stud-work across the door then it won't fall and fill the cavity.
Only way to be sure is too remove one side install rockwool insulation and re-board [only looking at about £5 worth of plasterboard.]

There isn't any studwork and the cacity is empty. I think your suggestion of rockwool and reboarding is the only practical way.
