I had the old hearth removed, a very long wide stone thing. It left a shallow depression in the screed floor, 5 to 10mm deep. Is there are reason not to fill with cement? Once filled, I will install a solid fuel hearth (slabbed granite), bedding it down on mortar. It will be much smaller than the old one.

No need to fill first , use the extra depth to bed in your granite.

The hole is much bigger (wider, longer) than the new hearth. I'll leave a large area under the new hearth unfilled as you suggest. But I want to level the bits beyond. Also the new hearth needs two to carry. Sounds like you think cement will be fine.

Mortar will be fine. What is the final floor covering likely to be, out of interest?
