Plasterboard a ceiling

Hi, I'm going to plasterboard a ceiling in a room that has a chimneybreast with an alcove either side of it, is it best to cut the plasterboards to fit round the chimney into the alcoves or to just put full sheets across it and infill the alcoves with separate pieces?

Hi, The joists run parallel with the chimney breast

Personally try to limit the joints to the minimum practicably possible.
So I would form the board, so it was cut to accommodate that.
By running parallel do you mean, the joist run in to the recess vertically or horizontally?
If horizontally, is there a joist that allows to fix a board, in front of recess and along the front of the chimney breast? A picture would help to give you your best solutions. But there are no written rules for this, just logical processes.
