fixing slates at verges (very exposed roof)

Hello Guys.
Wondered if anyone can give me some advice on the best way to fix new 12x8 slates at the verges (other than just usual nailing) as my roof is very, very exposed to high winds and I don't want to risk of them being lifted off.
Also, is it usual practice at a valley, to bed and infill between the valley and the slates, the exposed edge of the slates?...If not then how is this area finished?

I have a slate roof and live in a windy coastal area. My slates have mortar flashing at the edges. I wish now they had plastic Dry Verge. I've never used it but it looks like a better solution. Do a search or someone may know more.

Mortar cracks and falls out.
