I have a couple of jobs to do and have been given conflicting advice on the following:

I need to re-lay ridge tiles, but not sure about how long (approx.) would I need good weather for the mortar to cure before any rain shows up? or any frost?

a day with a frost free night, you could always cover them up and protect from frost

Rain is not so much of a problem as frost.

So long as you can keep the ridge sheltered with say a sheet of polythene then the rain ain't gonna hurt none.

I would be reluctant to use mortar if a hard frost is predicted. But, if you do get caught out then put the ridge to bed under a blanket of jute cloth. If you have enough then treble it up to provide adequate protection.

It is sold in 50m rolls and is used to protect brickwork against the frost.
