Procedure in changing washer on kitchen hot water tap

Have a leaking hot water tap in kitchen - alas there isn't an isolation valve.
Where do I turn off the hot water to replace the washer on the tap?

Try the airing cupboard, there may be a gate valve on the pipe feeding the cylinder, otherwise in the loft the outlet from the big cold water cistern.
Don't force them or they can break, and don't expect them to work perfectly!
 
Note that if the gate valve lets by some water, then you'll still be able to service the tap as the water will just seep out from the tap into the sink.
