There will be a certain amount of moist air or steam rising up the back of the fridge. This is because the moisture that collects on the cold panel inside the back, runs down a little pipe into a dish on top of the compressor, where it evaporates from the warm machinery, and the steam is carried away by the rising warm air at the back.

Possibly this moisture is condensing on whatever you put on top.

If you allow good air movement at the back/top, the moisture should be carried away. You will probably find there is a grill or spacer on the top to allow the moist air to escape.

It is unusual to get much moisture, though. Maybe the door seal is bad so that there is a lot of frost collecting on the cold wall inside the fridge? Or is it against an outside house wall so that the warm air rising is collecting moisture from the plaster?

Or could it be that the insulation of the casing is allowing the outer panel to become cold, thus encouraging condensation?
