Boiler stat controls the temp you want the boiler to run at, overheat stat stops the boiler going into orbit if the boiler stat fails.

The boiler stat is the normal operational stat (cuts out and in all the time)keeping the boiler to an optimum safe normal operating temp. The overheat stat is a once only cut out (i.e. once tripped has to be manually reset) to stop the boiler exploding should the boiler stat malfunction.
Why do you ask ?

when you say the temp you want the boiler to run at what inturn do you mean by the temp of the boiler to run is the temp of the water in the heat exchanger
