The french doors that have been fitted catch at the bottom following the rain. (I hadn't glossed although I had primed and undercoated) Are the doors doomed or can I get around this nightmare?

Normally new doors need settling after packaging, should leave as least 48hrs prior to fitting them as wood need air to breathe.

1,Make sure all the hinge butts are tight and not adrift from frame & door.
2,Have you seal underneath the door with primed or sealer?
3,Have you put a weather bar (not the metal type, the wooden type shape in an angle and a groove underneath) at the front of the door to stop the water going underneath to prevent swelling of the door. The way it works is the rain run down on the door and onto the weather bar which reach the groove underneath and start dropping onto your cills to prevent reaching the door.
4,Possibly wasn't enough gap at the bottom of the door to start with.

If above okay then you have no choice but to plane/shave it off.
