Had a call today from a customer, when using hotwater, no matter what setting you put the thermostat on, the water always comes out red red hot. Would this be an ntc fault, and if so, where abouts would I find the dhw ntc on this boiler?

Am almost sure the 'thermostat' control does not control the boiler in HW mode.
 
The dhw t/stat is actually more of a throttle on the front of the water section, is this the one you're adjusting? As Danny said the dial on the fascia won't alter dhw temp, only ch temp. The dhw ntc is on the dhw pipe coming away from the dhw heat ex, it's piggybacked to the main ntc.
 
check flow rates. I bet it isnt as hot in winter when the water coming in is colder. Thermisters on Vaillants are extremley reliable.

Forgot to mention, the boiler was fine last week, but the lady started to get worried when the boiler started to make a banging noise and the water started to get red hot. She said the pressure on the boiler was under 1 bar so she topped it up to 1 and a half but still the water is hot
