I am fitting a shower tray to a concrete floor, what is the best way to secure tray to floor and wall?

The manufacturer's installation instructions should tell you that.

If not, what type of tray is it?

18mm W&P plywood on a timber framework, in order to give clearance for the trap and permit maintenance, then a layer of fine sand & cement with the tray bedded onto it.
