    I did get it resolved, but I think in my case it was possibly a bit of careless plumbing that caused the problem. It turned out that the guy who installed the shower tray had lifted the waste pipe to put a better fall on it. He'd done this by simply choking up the pipe on some blocks of wood. Having replaced the bottle trap inner workings we figured that the only other thing it could be was the fall on the pipe - somehow this had created the airlock - (perhaps it had inadvertently made the water run up hill first as it left the trap) so he just removed the blocks of wood and put the pipe back the way it was before and this cured it. The reason why we're still a little unclear is that the shower tray is recessed into the floor, so we couldn't see what was going on. The only way we managed to remove the blocks of wood was to put a hole in the ceiling below.

    The shower still didn't drain radiply, so we chopped a centimetre off the inner part of the trap and that seemed to help.
