Finishing American oak skirting & door?

We have just had American Oak skirting, architrive & door frames fitted & are not sure what to use to finish them. We also have American oak veneered doors. We want to keep the original colour of the wood & want a matt/natural finish. We also want something that is easy to apply, preferably rub on with a cloth. We initialy thought Danish oil but have read that it yellows over time so are now thinking of Liberon Natural Finish Floor Varnish. How does that sound?
