Audacity http://audacity.sourceforge.net/ it free and works a treat, you can export to mp3, I use it to record music from YouTube and streamed radio. You'll need LAME to export to mp3 http://lame.buanzo.com.ar
It record whatever goes to your speaker output, so ANY PC sounds will end up on the recording. i.e. messenger, email alerts etc...

much simpler, google for a youtube to mp3 converter, there are loads ow websited to do it for you, you just copy and paste the URL in, and in converts it for you and offers the mp3 for download.
or
download realplayer (the free one) you can then click "download to realplayer" at the top of the youtube vid, and use its converter to get the full MP3, no need to mess with the long way recording stuff...

The reason I went down the Audacity route really was for recording BBC IPlayer programs that you cant download, the youtube bit is a useful by-product!! I like realplayer for videos, not tried saving as mp3, I'll try that.

probably a little late, but if others out there want to do something similar for converting to PC/MPEG/MP3/iPhone/iPad or any other format then you can use software called DVD Video Soft, its free and very very easy to use.
Can also help with converting a whole load of other files and formats as well.
