Copper to Plastic - Best method?

Pop out to B&q and ask there......
Just buy the joint and push the pipes in.. ( dont forget the insert for the plastic!!! )
 
You can use a standard brass compression fitting as long as you put a pipe insert in your plastic pipe.

I personally like Hepworth demountable fittings - they make dismantling so easy (for when you next replace the taps).
 
I,d use flexible tap connectors,remove the copper tails and fit directly to threaded tap tail and a compression joint on other end of flexi connector or a push fit speedfit,but don,t forget about inserts when connecting to plastic pipe. :)
