Down lighters.....condensation......

Don't forget these fittings get hot, and must not be covered closely, hence JohnD's mention of flower pots, they have a hole in the bottom, vent the fitting, and keep loose insuation safely out of the way.

This may be a long shot, but?

How about Retro Fitting roof mounted tile vents somewhere near the saves and somewhere near the apex of the lean to? This will have the effect of venting the void, from above, IE Outside no internal finish damage?

As posted a few posts back in my day job I have seen several cases of moderate to severe loft space condensation, totally randome, some had down lighters some did not some were a couple of Pensioners others were Mum Dad and a couple of kids.

The kitchen if you think on it is one of the "steamiest / air damp" locations in the house so plenty of warm very moist air that is just looking for somewhere to condense. Plasterboard and cellotex will not act as a Vapour Barrier, water vapour will simply permeate this material

Foil sandwich celotex coupled with foil tape is a very effective vapour barrier as is foil backed plasterboard.
