This desperately needs to be dunged out. If I unscrew the nut in the middle, will the grille lift out for cleaning, or is it going to be stuck in with silicon as well?

It’s a bit awkward to get at from underneath – no U bend underneath, just a mess of pipes, then a U bend way further down amongst them, so I’d need to take a lot of stuff off if I were to try and access it from underneath…

No, there's only me, and I know better than to pour fat into the sink. It’s bits of vegetables etc, and I can’t poke them out from above.

I've tried caustic soda, but it just runs away down the drain, so the bits of debris don’t get to sit in it and dissolve.

I can take a picture of the pipes I think, but not sure if it’ll tell you much – the waste from the sink does a right angled turn after a drop of a couple of inches, then feeds into a U bend a bit later.

So I could take the waste pipe off, but I’d sooner not disturb pipework if I can – which is why I wondered if the grille could be removed from the top.
 
start with a sink plunger, or sink pump.

Add Washing soda crystals the night before if it's greasy, spoon them in and add a spot of boiling water to wet them but not wash them away. Next morning, add just a mug of boiling water to move the solution into the pipes but not wash it away.

Removing the center screw will cause the flange underneath the sink to come away and may leak when refitted, as said good old fashioned sink plunger should do it, remember to block the overflow with a rag when plunging.
 
Far easier to just remove the trap/U bend and clean it out. Just remember to put a bucket underneath before you undo it.

Remove trap over a bucket and poke upwards to remove any deposits in the waste. The waste will probably have had some silicone applied when installed so I try to leave in place if poss.
