Quartz kitchen worktop thickness - 20mm or 30mm

Hey guys,

Quartz kitchen worktop thickness - 20mm or 30mm, which would you choose and why please?

Would 20mm be too "weak"? Or is it simply the look of it that's different?

Thinner it is the more support it will require,so less suitable for breakfast bars etc.

I'm interested in the 20mm quartz, however there is an issue. Basically, I have purchased the following hob: -

- Bosch PPS916B91E Series 6 90cm 5 Burner Gas On Glass Hob

Now, according to Bosch customer service and installation manual: -
"We recommend that the minimum thickness of the worktop requires 30mm. I have attached a copy of the installation guide for model PPS916B91E for your information."

The thing is there will be NO built under oven underneath this hob, only cupboard or drawers under it.

Is it actually possible to have 20mm worktop with my hob please? Because Bosch is saying no...

I just had a 30mm fitted. 20mm is all the fashion at the moment, but my breakfast bar is quite large, my induction hob is also pretty big and I wanted enough space behind the back of the hob for someone to eat on the Bar side. hence the bar is 1M deep, rather than the more usual 90cm. (its also about 3.4M wide, cant remember exactly). We also didn't want any supports, though we did add end posts at the back of the unit as we had enough spare. It doesn't look chunky and suits the kitchen nicely.

I'm new here, so apologies if this question is not in the right place.

Our kitchen currently has wood work tops (made by me several years ago by biscuit-joining old floorboards together, then cutting to shape and finishing with a nice routed edge). They have looked good for years but are finally looking tired now and we're thinking of replacing with granite/marble or similar.

My question is, can materials like this be cut ( and edges finished) with the right blades/bits in saws and routers? If not suitable for DIY with marble/granite does anyone have other ideas.
