boarding underside of joists in garage

As my garage is rather draughty and there is daylight showing around the facia board areas, I was wondering what I could use to board the underside of the joists in the hope of cutting the draughts out and maybe fit some loft insulation within. Would sterling board be the best option?

Err plasterboard? Maybe moisture resistant would be prudent?

A lot of people use pvc t&g boards.

attached,but only by about 1500mm along the length of one wall which has a doorway leading into the kitchen.In that section the rooftop has small pieces of plasterboard attached to cover the gap where the soffits would be with insulation material within. The door is a fire door type but we attached a cat flap and through there we get draughts coming into the kitchen. I thought if I boarded the whole ceiling area or carried on with what the builders did, it would dramatically cut down the draughts and damp in the garage even though we have another catflap on the external door going into the back garden
