Socket under kitchen sink

Underneath the kitchen sink is a single gang socket. Next to this is a gap where the previous owners had a dishwasher (there's a connection off the cold tap going to one side).

Swmbo wants a new kitchen tap that also filters water. It comes with some sort of electronic device that also needs to be plugged in. She also wants a dishwasher.

I was planning on just swapping out the socket for a 2-gang but the bit that concerns me is it being under the kitchen sink (thinking about overflowing sink or a leak + electricity = bad).

Can I just swap it for a 2-gang socket?
Should I do anything special eg fit one with built in rcd?
Should I try to relocate the socket (not sure where to move it)?
