Humidistat Bathroom Fan Recommendations?

It is worth getting a timer model either for the fan alone or linked to the light, half an hour overrun will get rid of the moisture/condensation in my experience. In line fans have the timers built in, but it's a pain to have to get in the loft to adjust the time (for example between summer and winter).

How easy is it to change the wiring so it's attached to the light and on overrun?
That would be much better really. Easy loft access. Have a light switch on the wall outside the bathroom. Pull cord inside operates the current fan.

Relatively easy if the fan is designed to work with light, would need to see the make and model though

If connected to the light switched live, it will work with the light - the make and model make no difference.

On the manrose.

I have the timer set to ~2 mins to help shift smells
And let the humidity sensor sort out the steam after showers (talking at least 10 mins )

Do a web search for a Vent-Axia Svara, sounds like it might fit your needs. I have two and have been pleased with them. They have inbuilt sensors for light & humidity and you set up & control them via an app on your phone.

Not that I'm really in favour of such things, but do tell us what you can do from the app?
Do you set the humidity level for the fan to start, rather than adjust on the fan ?

Yes you can configure all settings of the fan via the app, which I found much easier than the little switch things on conventional fans:
You can configure the speed it runs during trickle ventilation, and when the light and humidity sensors are active.
You can switch any of the sensors off if required, as well as adjust their sensitivity.
You can set “silent hours” when the fan will only run on trickle ventilation so it doesn’t wake people up in the night if someone switches the bathroom light on, not that the fan is hugely loud to start with.
There is also a facility to allow the fan to do a full speed purge run every 24 hours which is supposed to completely change the air in the room.
At the top of the app screen there is a button to switch on a 15 minute “boost” if required.
You can set the name of the fan if you have more than one, I’ve called one bathroom and one shower room.
The fans connect to your phone via Bluetooth so you need to be in quite close proximity to them. I guess the app makes them much more configurable than a regular fan. I think that’s just about everything!

I don't have a fan in the bathroom. One is not necessary.

If you actually need one, there are more fundamental problems.

One is not necessary.

Opinions differ. A hot, steamy shower delivers a lot of water vapour into the house.

You can remove it, or you can let it condense on cool surfaces and cause damp, if you prefer.

There are also many people who prefer a bathroom to smell fresh.

I did mean one is not necessary in my bathroom which is clear from the rest of my post.

So? Unless there is too much already, it doesn't matter.

You can remove it, or you can let it condense on cool surfaces and cause damp, if you prefer.
Unless there are (more fundamental) problems, it will disappear on it own and not cause 'damp'.

There are also many people who prefer a bathroom to smell fresh.
How long does even the worst smell linger?

People expect a fan to cure problems; they do not.

You don't like fans, then.

In a bathroom, there's not much chance of preventing people having showers or voiding bodily fluids.

I use the vent axia ones, they are very quiet. They do a humidstat version.
