advice re old hearth

The above is my problem. It's all a bit of a mess including the hearth. I want to make it pristine.

Do I

1. Tile over the existing tiles, there is a fair degree of unevenness?

2. Glue plasterboard over the existing tiles then tile over the plasterboard?

3. Chip off all the old tiles and either replaster or glue plasterboard on then tile.

What do people think is the best thing to do here?

Chip off old tiles, re-plaster if required and then re-tile.

I'd go with 3. If it needs it, plastering is fine if you can do it, but if you can't, like me (my last effort had more lumps and bumps than the peak district) I'd personally reboard with plasterboard. Quicker and easier to get flat... for me anyway :)
