Boxing in under stairs: plasterboard Vs wood

I've opened up under this narrow staircase and want to box it. I cannot plaster and wondered if I might be better using thin ply than plasterboard, is this ever done and if so what are the pros and cons?

Given it's under some stairs in a room that's going to be a home gym, I don't mind it being a little rough... If I use plasterboard is there a way to avoid skimming? E.g taping the joints?

Plasterboard it, and tape any joint and fill screw/nail holes with easi fill - simples

Look up the idea of filling the space with several roll out trolleys with shelves, shaped to fit the space. I had ours boxed in the framing, plasterboard and a peculiar shaped door, which makes it really awkward to utilise the space and enter it. Roll out trolleys are a much more sensible option.

Interesting idea, you mean tall narrow ones to go under each step, sort of?

The room's intended as a gym so I opened up that space thinking I could put weights and mats and things there, but in the shortest part something like you describe could work well

Well, not under each step - that wouldn't be possible if they were needed to roll out, but several sections custom made to fit the slope and what ever suites what you need to store. It would need some sort of guide track for the wheels, so they roll back into their proper location.
