How big and heavy is the gate?
You can use butt hinges on a gate, if it is fairly light, but they must be completely rust-proof throughout (including the pin and screws). Ball-bearing hinges are not rustproof as the balls are hardened plain steel.
Brass or stainless will do. I prefer lift-off hinges.
hook and band hinges are much better on a gate. Why don't you want them?
There are a few bolts and latches for marine use, in brass or (preferably) bronze, sometimes chromed, or you might find stainless ones. Indoor stainless fittings are generally of poor quality steel and will soon get unsightly corrosion marks.

Do you mean butt hinges like a front/internal door?
You could use exterior ones, but theres a lot of butts.. (sorry) gate posts frequently can warp/move through the year... and fitting normal hinges might end up binding the hinge or not letting it close properly, ideally you should have a decent gap from gate to post, at least 10mm, this helps with air flow and stopping water being held and expanding the gate etc
Not sure how they would weather, especially bearings etc.
I'd just use a decent hook/band or reversible (if you want a fancier fitting)

IMO hook and band is more suitable, but if you want some all-stainless butts, I have some left over. at modest price. They are lift-off, which has a much thicker hinge pin and can easily be lubricated and accomodates vertical movement.
I use them on my external doors and the shed. Most have a PVD brass plating which does not seem to tarnish.

Normal door furniture will not cope with weather conditions, the catch would seize when the gate swells and not catch at all in very hot dry conditions.
Oh yeah, those hook and band ones look much better than the triangle ones. Thanks for the offer though John.
Can you get bolts that can be operated from either side - ideally with the bolt inside the door (my gate is z-framed with T&G both sides). I'm not the 'lift up latches' biggest fan.

I was wondering if a sort of protruded/offset butt hinge existed, so that the hinge provides the spacing.
Would have no effect on shrinkage or expansion.
Yeah that's what I thought but if you look at this one the imagery makes it look flush with the plate! Well to me anyway!
