Last week, we noticed water dripping through the ceiling in the hall. I've now traced the source to the shower and work is in hand to sort that out, but I cut a rectangle of soggy plasterboard out - about 18" x 14" and I now need to repair it.

The plasterboard that came out, was about 15mm thick, but my local B&Q sells 12.5mm thick sheets of it. I assume there was a skim of plaster a few mm thick on there?

I was wondering about cutting a rectangle the same size as the hole and screwing it to the two joists above it, then trying to mix up some plaster and get it level with the rest of the ceiling. Is that the right thing to do? Should I try to "glue" the edges of the infill piece to the cut edges of the surrounding plaster with something?

You’re on the right lines, but you also need to fix noggins to support the edges so no need for glueing. So use existing joists plus add (smaller) battens along any edges to allow the new board to be fixed around all edges. Then use multi finish/board finish to skim it and have a wet brush handy to try and blend in the edges. You’ll still need to sand it to make it really invisible though.

Cut it wider to the edge of the joists, plasterboard screws through new patch into joists, plus a few screws into existing plasterboard near the hole edges, can't see any need for noggins, the rest doesn't have 'em

Sorry, didn’t look at the picture properly, yes no need for noggins, just make sure the new board meets the old on a joist. Been a long week (y)
