Thinking of DIYing my bathroom sheet vinyl. Have never laid any flooring before.
Would be a lot easier to install before toilet and basic put in - is there any reason not to?
Room is about 2.3m square, with rectangular shower in one corner, plus toilet and rectangular vanity unit.

Yes.

What is the existing floor?

Joints, nail-heads and screws will show through and make holes in the vinyl, so you can lay a thin sheet of ply first.

Yeah. Floor is 18mm green chipboard. But was planning on a 2mm thin something, ply or similar.
Might get a local fitter to quote putting it in still, depends how much they charge...

I fitted toilet first and then vinyl floor, it was a real pain to do (made template of toilet base etc).

My thinking was you don't want the toilet rocking on the soft vinyl but it would have been infinitely easier fitting the toilet afterwards.

I don't think you need anything ontop of the green chipboard but just make sure that any joins are taped over and make sure all screws are below the surface and fill any that war well below the surface.
I put my vinyl down first and then fitted the toilet on top, rocking is not a danger but the toilet sinking into the vinyl might be. After 3 years (so far ) I have not had any issues. The pan to waste connection has flex in it but the cistern which is fixed to the pan (which might sink) is fixed to the wall so any drop of the pan could upset the join between the cistern and the pan. I mitigated this slightly by not fixing the cistern too tightly to the wall.
The easiest thing is to lay the vinyl then offer the loo in position draw around it and then cut it out before you fix the loo

or maybe after putting loo down, but before fixing it, cut the vinyl and seal?
The boards are pretty level so far, and will screw screws below surface. But I was going to put 2mm on top just to make it more level with rest of house and also so if we need to replace the vinyl it will come up easier.

if you lay the vinyl before putting the stuff in place, there will be no gaps where water or grime can get under. With no cuts it will be easier to clean.

I fitted my own (cutting around a basin/loo/two pipes and doorway plus skirting edge.

The flooring only cost £50 but I traced the old floor onto the new with a sharpie, having made a couple of modifications.
It worked fine, but NOTHING I used would remove the offing sharpie. In the end I bought the same floor again, and fitted it without a line. It doesn't fit nearly as well as the first go.

I will replace it later and Carpetright would fit it for £50.

yeah, I think or the sake of £50 or so I'll pay a pro to fit mine!

Fit toilet and basin after the vinyl.
Much easier and no risk of water infiltration in gaps around toilet

Fitting after - also because, as suggested by plumber, we don't want to put the floor down before the shower is finished. Toilet and basin will go in first, and then the shower will be tiled and installed a month or so later.

Going to pay somebody to install the floor for me, I really don't understand how they manage to cut it in the right places while laying it!
