Have a some fence post mortar bags left over from garden fencing.

Could I use these for pointing the 2 x 2 & 3 x 2 patio slabs etc.

No - the 'fence post mortar' is likely to be a form of 'Postcrete' and is unsuitable for any other purpose.

That is unless you've used a bagged mortar mix for setting your fence posts!

Building sand 4/1 mix for pointing.
You’ll make a mess with postcrete, plus its full of pebles that wont go into the joints. Unless its a big joint, that a post will go into

The mortar is 'Carlton - FP ECOMIX' and has no pebbles.

I find the 4:1 mix too soft and crumbles/breaks up well within 12/15mths as it tends to be damp/waterlogged most of the time.

For me 'Carlton - FP ECOMIX' shows up as PostCrete -used for seeing fences posts in place.

Is this what you have?

This is Concrete.
And fast setting too (5-10mins).
This will be impossible to use as a mortar.

For paving stones (as a DIYer) I use Use a mortar mix of 6 parts sharp sand to 1 part cement.
