Hi,

I have a storeroom which is built as a lean-to on the existing house structure. It is not a habitable room, and as such is bare brick / block, and single skin on one of the walls. I would like to have smooth walls instead of the abrasive brick.

My idea is to dot/dab some thin plywood sheets to the walls, and call it good. That way I don't have to worry about plastering etc, and I have a hardwearing surface to use.

Is there any reason for me to not go with this? (thinking fire risk, regs, etc).

Personally I'd do battens screwed to the brick, and thicker ply /OSB screwed to that
 
there might be penetrating damp or condensation present in the lean-to you describe.
fixing board sheets might create further condensation/mould behind the sheeting?
damp can penetrate the D&D adhesive and present on the surface.

I would advise against dot and dab adhesive as it's simply not intended for that application. You could use a grab adhesive but I would advise against that also. I'd do as Tigercubrider suggested and use a mechanical fix and you could use a polythene sheet to act as a vapour barrier. If you are concerned about fire then you should consider either overboarding with plasterboard or plasterboard in lieu of ply/osb. Finishing is an inconvenience for your application but using tapered edge boards you can tape and joint it without much hassle at all, especially as you don't require a 'perfect' finish all you need do is 'flatten it off'.
