Certain types of rustic, slightly irregular shaped bricks don't look so good when the normal jointing method is used. I have noticed that churches usually have a flush joint.
 
Interseting so I suppose it's a matter of taste then.
My extension I had done in reclaimed brick that were old outbuildings that matched the house. The house has flush pointed lime mortar and I was going to match this but the brick layer didn't flush point to begin with and he noticed it did not match and offered to flush point but I liked the way it highlighted all the irregularities/ charm of brick and left it recessed. It blends in great and I quite like the fact it's slightly different! I guess if you are going for an old look with a new brick it's the way to go.
 
Why? Is this a "heritage look " thing or specific need?
The arris on these bricks is not precise. This means the bed joints, when struck with a bar jointer, appear to wander about looking unsightly. We flush up the joints a bag rub 'em.
