Samsung Larder fridge, thermostat or also refrigerant issue?

Model RR82PDRS which is 9 years old.

I have a 1.8m Samsung larder fridge which I had to empty and drag out for a boiler service. It was refilled and switched back on and then the following day it was switched off, emptied, put back and then refilled again. The fridge was kept upright during the moves.

After 8 hours the digital display on the fridge was reading 8C despite being filled with cold food. It took 48 hours to reach 3C. I had put in the rear of the fridge 2 calibrated digital thermometers for comparison. While the fridge door has shown 3C and then 1C after I lowered the temperature, ever since the thermometers are reading up to 7C. This morning after the fridge was left overnight the thermometers are reading 6C while the door is showing 1C.

Is this purely the thermostat, which I can't find in the fridge, or is there also a problem with the refrigerant seeing it took 48 hours to get to the initial 3C?

Where would the thermostat be located as the settings are on the door? Has it even got a thermostat rather than a temperature sensor?

(edit) might it be the main PCB? Looking at spare parts it says. A defective board can stop your appliance from cooling correctly making your foods go off.
