I think it has an anti-freezing thing built into it so it turns itself on when it's gets cold. It's rather technical!

When in holiday mode the CM907 sets the temperature to 10° by default so no there won't be any freezing!

Ok...so how many of these three magical boxes affixed to my walls do I need to turn to "holiday" mode? Because the guide books don't tell me.

After having a look at the MI, when selecting Holiday mode you will have to set the number of days you will be away and then set the holiday set temp (it is 10deg as default as @Johnmdc suggests
). You can set that to 5deg or 10deg or whatever you want the house temp to sit at, it really is the same as setting them to MAN and then setting the target temp you want the house to sit at. Personally I'd want it set to 5deg to minimise gas usage.
