Hi left my son to cut this out and he went too big, so can I just use joint filler to block this out 10mm ?

The normal method it to finish ends like that with a blind return. Like this.
I would have done that if it was still to be fitted. Can it be done in situ

Just cut the existing piece back using a left hand, LH, external mitre template, to mark where to cut, then cut another small separate piece of coving, using a RH external mitre template. Join/fix the 2 together on the ceiling, then you'll end up with a neat, external mitre.
Be careful when you cut the existing piece. When you've marked it, cut it back carefully with a sharp Stanley knife.

Thanks did all the house when I moved in years back but used the metal template at that time

You can go on the internet, and print off some Gyproc 100mm, coving templates. I do that all the time for whatever I need.
