How many amp fuse for a 240v extractor hood ?

The cooker hood should have a rating plate on it somewhere indicating it's power demand, from this you should be able to work out the appropriate fuse rating.
I think for most if not all domestic cooker hoods a 3A fuse will be appropriate though.
