I had a full rewire and the electrician removed the MR16 12V IP65 downlights from the bathroom and replaced them with fireproof 240V ones. The problem is these, although LEDs, they are hard wired to a junction box in the loft and have no replacement bulbs.

So does that mean that when the LEDs go( and I have seen LEDs failing ) I have to get an electrician to replace the fittings!

I guess I opened one up and I discovered only 75mm height below the ceiling as there is a joist right underneath...

Any idea where I can get low depth fireproof downlights for the bathroom with either MR16 12V bulbs or 220 GU10s?

If an integrated fitting fails then yes you need to replace the whole thing.
mid they did early then get a replacement under warranty.
You do not need an electrician to change a downlight. You can do it yourself.
If you go for a replacement do not go (back) to 12v. If you do that you will also need to buy an LED driver for each fitting. No point, 230v LED is fine.

Sorry, I do not understand that. In my house the room is below the ceiling!

I had Ip65 rated Mr16s that I fitted myself with an electronic driver specific for LEDs but the electrician replaced them with fixed 230V .
My experience with the 230V is that they overheat but thats back in 2009 when I fitted some GU10s within a hood in a residential.

I'm wondering if the 230V are ok nowadays and more reliable that do not overheat ..

If you cover light fittings with a fire hood, they will very likely overheat. Just as if they were covered with loft insulation or anything else.
Doesn't matter what voltage or connector they have.
Fire rated items are rarely required, and even if they are (or you want to install then anyway), buy light fittings that are suitably rated.
Separate fire hoods are useless.

GU10 is the standard choice for downlights with replaceable lamps.
12V efforts with separate drivers will cost more, have more parts to fail, and will have a massively reduced choice of lamps.

You will have a very hard time finding those, as the lamp itself is 50mm depth, and with the GU10 connector on the back plus wiring you are already very near to the 75mm, and that's without any front bezel or other components.

The integrated types do need to be replaced as a whole unit when they fail, and they are not what I would have selected for that reason.
However they are presumably working, so there isn't any reason to replace them. They generally last for years.
If you are concerned about availability of replacements in the future, buy one or two extras now.
