I am looking at plasterboarding my kitchen ceiling it's only small 1meter by 3 meter. Would normal plasterboard be ok, or is moisture resistant better? I plan on boarding with tapered joints then taping and filling. Without skimming. Would sealing the boards with SBR bond or similar be ok? Thanks

What's above the ceiling? Fit insulation between the joints and then double board the ceiling, then get someone to skim it.

Although a skim finish would look the best, a 3 X 1m area would only require one board joint (depending if you can get large boards up past wall units etc.).
This would be an easy DIY job that would give a decent result.
As a diy'er who has plastered, my preference is to fill and sand the joints and see what it looks like. If it looks poor, you can always get it skimmed afterwards.
Although as Herts says, your choice may depend on what is above the ceiling.
If it is a heavily trafficked room, the filler plugs below the screws could regularly be pushed out. If a loft space is above, a vapour barrier should be considered.

Thanks and if I boarded and taped filled and sanded one normal plasterboard be ok?

12.5mm plasterboard, although heavier offers 1/2 an hour fire resistance. There is no need for moisture resistant board.
Standard boards will be fine.

I find coating the boards and filler with something like:

provides a good surface to paint over and will help offer some moisture protection to the board as well.
